Tom Yam Goong
Spicy Prawn Soup
- 2-3 large prawns, shelled and deveined
- 1 stalk lemongrass, cut into 2 inches in length
- Few straw mushrooms
- Few slices of galangal
- 2 kaffir lime leaves
- 2 red chilies
- 1 teaspoon fish sauce
- 1 teaspoon lime juice
- 1 ½ cups chicken stock
- 1 teaspoon shrimp paste
- 1 tablespoon finely sliced lemongrass
Garnish
- ½ tablespoon coriander leaves
- In a saucepan, boil chicken stock, add prawns head and then take them out
- Add lemongrass, kaffir lime leaves and galangal
- Add prawns, cover and simmer for a few minutes
- Add mushrooms. Simmer for another few more minutes
- Remove from stove, season with fish sauce, lime juice, red chilies and shrimp pasteGarnish with coriander leaves
