Tom Yam Goong

Spicy Prawn Soup

  • 2-3 large prawns, shelled and deveined
  • 1 stalk lemongrass, cut into 2 inches in length
  • Few straw mushrooms
  • Few slices of galangal
  • 2 kaffir lime leaves
  • 2 red chilies
  • 1 teaspoon fish sauce
  • 1 teaspoon lime juice
  • 1 ½ cups chicken stock
  • 1 teaspoon shrimp paste
  • 1 tablespoon finely sliced lemongrass

Garnish

  • ½ tablespoon coriander leaves
  1. In a saucepan, boil chicken stock, add prawns head and then take them out
  2. Add lemongrass, kaffir lime leaves and galangal
  3. Add prawns, cover and simmer for a few minutes
  4. Add mushrooms. Simmer for another few more minutes
  5. Remove from stove, season with fish sauce, lime juice, red chilies and shrimp pasteGarnish with coriander leaves
