Phat Kra Pow Moo Sab (or Gai Sab)
Wok-Fried Grounded Pork or Chicken with Holy Basil
- 150 grams grounded pork or minced chicken
- 4-5 hot chilies chopped and pounded together with 5-6 chopped garlic cloves
- ¼ teaspoon finely chopped galangal
- 2 tablespoons onion, sliced (optional)
- 2 tablespoons red/yellow pepper, sliced
- ½ cup fresh holy basil leaves
- 1 teaspoon fish sauce
- 1 teaspoon dark sweet soy sauce
- 2 teaspoons oyster sauce
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- ¼ cup of water
For garnish
- ¼ cup holy basil leaves, deep fry till crispy
- 1.Heat vegetable oil in a wok. Add pounded chilies, garlic and galangal. Stir-fry quickly until good aroma comes out
- Add pork (or chicken) and sliced onion. Stir-fry about 2-3 minutes. Then season with oyster sauce, dark sweet soy sauce, fish sauce, sugar and stir-fry. If it is too dry, add a little bit of water
- Remove from heat, add pepper and holy basil leaves and stir it around
- Arrange on the dish and garnish with crispy holy basil leaves
